Roasted Sweet Potato Sandwich with Blue Cheese, and Apples, Pesto, Kale
A sandwich I ‘d in Boston at Flour Bakery inspired this vegetarian sandwich. It’s loaded with flavor and SO great!
Complete time: 35 MINUTES
1 tbs olive oil
4 pieces bread that is substantial
1/3 cup chopped kale
2 tbs basil pesto
Preheat the oven to 400 degrees F. Put the sweet potato rounds in a medium bowl. Put the sweet potatoes on a sizable baking sheet, in one layer. Season with pepper and salt, to taste. Bake until the rounds are browned and tender,.
To assemble the sandwiches, place two pieces of bread on the counter. Add the kale. Moisten the pesto over the sweet potatoes. Then add the apple pieces. Top with blue cheese along with the 2nd piece of bread.
